I find if you roast your potatoes in oil and those foil pans they come out lovely and crispy. Far better than an ordinary roasting pan.

I never do a roast dinner, far too much for me to eat or to bother to divide it into portions for freezing.
I also suspect a defrosted roast dinner would lose most of its best qualities and become bland and uninteresting.
Don't quit, never give up !

You can buy small roast dinners for one, either fresh or frozen, at the supermarket. I recommend the Morrisons ones. Birds Eye do nice ones too.

I always do two roast dinners on a Sunday. One for Monday. Saves electricity too when you are on your own. But then I enjoy cooking.
